Mock Hollandaise Sauce
|Medium white sauce||1 Cup (16 tbs)|
|Egg yolks||2 , beaten|
|Lemon juice||1 Tablespoon|
1. Prepare white sauce. Stir 1/4 cup of hot white sauce into egg yolks, then blend into remaining sauce in measuring pitcher. Add butter and lemon juice; mix well.
2. Cook uncovered in microwave oven 1 minute at High, or until hot and butter is melted; stir once.
