Easy Spinach Souffle

Ingredients
  Mayonnaise/Low fat cholesterol free mayonnaise dressing 1⁄2 Cup (8 tbs) (Real Or Light)
  Flour 1⁄4 Cup (4 tbs)
  Grated onion 2 Tablespoon
  Salt 3⁄4 Teaspoon
  Ground nutmeg 1⁄4 Teaspoon
  Freshly ground pepper 1⁄4 Teaspoon
  Milk 1 Cup (16 tbs)
  Frozen chopped spinach 10 Ounce, thawed and well drained on paper towels (1 Package)
  Eggs 4 , separated
  Cream of tartar 1⁄4 Teaspoon
Directions

Preheat oven to 400°F Grease 2-quart souffle dish.
In 3-quart saucepan combine mayonnaise, flour, onion, salt, nutmeg and pepper.
Stirring constantly, cook over medium heat 1 minute.
Gradually stir in milk until smooth.
Stirring constantly, cook until thickened.
Remove from heat.
Stir in spinach.
Beat in egg yolks.
In small bowl with mixer at high speed, beat egg whites with cream of tartar until stiff peaks form.
Gently fold into spinach mixture.
Spoon into prepared dish.
Place on lowest rack of oven.
Immediately reduce oven temperature to 375°F.
Bake 40 minutes or until top is puffed and golden brown.
