Ingredients
  Mayonnaise 1 1⁄2 Cup (24 tbs)
  Fresh dill/1 tablespoon dried dill 2 Tablespoon
  White wine vinegar 1⁄4 Cup (4 tbs)
  Water 2 Quart
  Salmon 8 Pound, cleaned (1 Whole)
  Dill sprigs 2
  Lemon wedges 2
  Chopped celery 1⁄4 Cup (4 tbs)
  Chopped carrots 3⁄4 Cup (12 tbs)
  Onion 1 , sliced
  Peppercorns 1 Teaspoon
  Salt 1 Tablespoon
  Fresh dill sprigs/1 teaspoon dried dill 2
  Finely chopped fresh chives 1 Tablespoon
  Heavy cream 1⁄2 Cup (8 tbs), whipped
Directions

Whisk together mayonnaise, dill, and 1 tablespoon chives (if desired).
Let stand.
Lightly fold in whipped cream.
