Cognac Pork

Ingredients
  Oil 1 Tablespoon
  Butter 1 Tablespoon
  Pork tenderloins 2
  Onion 1 , chopped
  Garlic 1 Clove (5 gm), chopped
  Cognac 4 Ounce
  Butter 2 Teaspoon, softened
  All purpose flour 2 Teaspoon
  Beef broth 2 Cup (32 tbs)
Directions

Preheat oven to 350 °F (175 °C).
In a skillet, heat oil and 1 tbsp (15 mL) butter.
Sear tenderloins.
Remove cooking fat from skillet, except 1 tbsp (15 mL).
Lightly brown onion and garlic.
Mix in cognac.
Simmer 3-5 minutes.
Remove tenderloins from skillet.
Transfer to a roasting pan.
Cook in oven 30 minutes or until tenderloins are done.
Meanwhile, in a small bowl, blend softened butter and flour to a paste.
Set aside.
In the same skillet, pour beef broth.
Simmer until liquid reduces by one third.
Fold in butter and flour paste.
Pass sauce through a sieve.
Set aside.
Carve each tenderloin in half.
Arrange on individual plates.
Coat with sauce.
