French Green Peas
|Bacon slices||4 , cooked and crumbled with 2 tablespoons drippings reserved|
|All purpose flour||1⁄2 Cup (8 tbs)|
|Chicken broth||2 1⁄4 Cup (36 tbs)|
|Frozen green peas||20 Ounce (2 Packages, 10 Ounce Each)|
|Onions||2 Small, thinly sliced|
|Dried parsley flakes||2 Teaspoon|
Combine reserved bacon drippings and Oil in large saucepan.
Stir in flour.
Cook over moderate heat, stirring constantly, 3 to 4 minutes, or until light brown.
Gradually stir in broth.
Heat to boiling.
Add peas, onions, parsley flakes, salt and pepper.
Return to boiling.
Simmer, stirring occasionally to break apart peas, 20 minutes, or until onion is tender.
Sprinkle with crumbled bacon.
Garnish with sliced pimiento, if desired.
