Blueberry Clafouti

Ingredients
  Blueberries/Cranberries/pitted bing cherries 2 Cup (32 tbs)
  Granulated sugar 1⁄2 Cup (8 tbs)
  Skim milk 1 Cup (16 tbs)
  All purpose flour 1⁄2 Cup (8 tbs)
  Eggs 2 Large
  Grated orange rind 1 Teaspoon
  Vanilla extract 1 Teaspoon
  Ground cinnamon 1⁄2 Teaspoon
  Confectioners sugar 2 Tablespoon, sifted
Directions

1 Preheatthe oven to 375° F.
In a medium-size bowl, combine the blue berries with 2 tablespoons of the granulated sugar and let stand while preparing the batter.
2 In a food processor or blender, whirl the remaining granulated sugar, the milk, flour, eggs, orange rind, vanilla, and cinnamon for 30 seconds or until smooth. or put all the ingredients in a medium-size bowl and stir just until blended.
5 Lightly grease a 9-inch pie plate and arrange the blue berries on the bottom.
Spread the batter evenly over the blue berries and bake for 35 to 40 minutes or until puffed and lightly golden.
Sprinkle with the confectioners sugar.
