Orange French Toast
|Egg whites||2 Large, lightly beaten|
|Skim milk||2⁄3 Cup (10.67 tbs)|
|Grated orange rind||1 Tablespoon|
|Unsalted margarine||1 Tablespoon|
|Whole wheat bread slices||8 (Thin Slices)|
In a shallow bowl or pie pan, whisk the egg whites, milk, and orange rind just until blended.
Melt 1/4 of the margarine in a heavy 12 inch nonstick skillet over medium heat.
Preheat the oven to 200°F.
Quickly dip bread slices in the egg mixture, turning to coat both sides well.
Place in the skillet and cook about 3 minutes or until brown; turn and cook the other side about 3 minutes.
Prepare the remaining bread slices in the same way, adding more margarine as needed.
Keep the cooked slices warm by placing them on a platter in the oven.
