Simple Ratatouille With Eggplant And Zucchini
|Olive oil/Vegetable oil||60 Milliliter (1/4 Cup)|
|Garlic||2 Clove (10 gm), chopped fine|
|Onions||2 Medium, thinly sliced|
|Eggplants||2 Medium, cut into fingers|
|Zucchini||6 Medium, unpeeled, thinly sliced|
|Green peppers||2 , diced|
|Salt||2 Teaspoon (10 Milliliter)|
|Thyme||1 Teaspoon (5 Milliliter)|
|Sugar||1 Teaspoon (5 Milliliter)|
|Basil||1⁄2 Teaspoon (2 Milliliter)|
€¢ Pour the oil into an 8-cup (2 L) microwave-safe dish. Microwave at HIGH 2 minutes.
€¢ Add the garlic and onions, stir well. Microwave 3 minutes at HIGH. Stir.
€¢ Add the eggplants, zucchini and green peppers, stir well.
€¢ Microwave 3 minutes at HIGH.
€¢ Add the remaining ingredients, stir until well mixed.
