Burgundy Burgers With Roquefort
|Ground beef chuck||8 Pound|
|Chopped parsley||1 Cup (16 tbs)|
|Chopped green onion||1 Cup (16 tbs)|
|Salt||2 1⁄2 Tablespoon|
|Dry red wine||4⁄5 Quart (1 Bottle)|
|Blue cheese square/Roquefort squares||12 Ounce (About 24 Squares)|
Mix together the ground chuck, parsley, and the green onion; season with salt and pepper.
Shape into 24 patties, making a depression in the center of each one.
Place in a shallow pan and pour wine over patties, pouring into the depressions.
Chill 2 hours or longer.
Remove meat patties from marinade and broil over medium hot coals, for 8 to 10 minutes for medium rare.
