Souffle Au Grand Marnier
|Milk||3⁄4 Cup (12 tbs)|
|Orange marmalade||3 Tablespoon|
|Egg yolks||4 , lightly beaten|
|Grand marnier||1⁄4 Cup (4 tbs)|
1. Preheat the oven to moderate (375° F.).
2. Melt the butter in a saucepan and stir in the flour.
3. Add the milk gradually, stirring with a wire whisk, and cook over low heat until the mixture thickens. Stir in the marmalade and the egg yolks. Add the Grand Marnier.
4. Beat the egg whites until stiff and fold them into the souffle mixture. Butter a one-and-one-half-quart souffle dish and sprinkle the bottom and sides with sugar. Pour the souffle mixture into it and bake until puffed and golden brown, about thirty to forty-five minutes.
