Cheese And Spinach Souffle
|Thick white sauce||1⁄4 Pint|
|Grated cheese||4 Ounce|
|Cooked and chopped spinach||1⁄4 Pint|
|Finely chopped onion/Chopped chives||1 Teaspoon|
Heat the oil and fry the onion in this then mix with the sauce, spinach, grated cheese, seasoning and the beaten egg yolks.
FOLD in the stiffly beaten egg whites.
Pour into a greased souffle dish and bake in the middle of a moderate oven (375 °F. gas Mark 4) for 35 minutes.
