Classic Mushrooms A La Grecque

Ingredients
  Small mushrooms 1 1⁄2 Pound (Whole)
  Water 2 Cup (32 tbs)
  Olive oil 1 Cup (16 tbs)
  Lemon juice 1
  White vinegar 1 Tablespoon
  Stalk celery 1
  Garlic 1 Clove (5 gm), peeled
  Rosemary 1⁄2 Teaspoon
  Sage 1⁄2 Teaspoon
  Fennel branch 1
  Thyme 1⁄2 Teaspoon
  Bay leaf 1⁄2
  Freshly ground coriander 3⁄4 Teaspoon
  Peppercorns 8
  Salt 3⁄4 Teaspoon
Directions

1. Combine all ingredients and bring to a boil. Simmer, stirring occasionally, five minutes.
2. Pour into a bowl and marinate overnight in the refrigerator.
