Onions Au Gratin
|White onions/Large onions sliced||1 Pound|
|Cream/Milk||1⁄2 Cup (8 tbs)|
|Ground black pepper||To Taste|
|Chopped parsley/Pimento||1⁄4 Cup (4 tbs)|
|Bread crumbs/1/4 cup grated american / parmesan cheese||1 Cup (16 tbs), buttered|
1. Peel the onions and boil them in lightly salted water until just tender. Drain well, reserving one-half cup cooking liquid.
2. Melt the butter in a saucepan, add the flour and blend with a wire whisk. Meanwhile, bring the cream to a boil and add all at once to the butter-flour mixture, while stirring vigorously with the whisk. Add the reserved cooking water, salt, pepper and parsley.
3. Add the onions to the sauce and turn the mixture into a casserole. Sprinkle with buttered crumbs or grated cheese, or a mixture of both.
4. Brown under a preheated broiler or, if the dish has been prepared ahead, bake uncovered in a preheated moderate oven (375° F.) until heated through and brown on top.
