Polio Tonnato

Ingredients
  Cooked chicken 1
  Anchovies 3
  Lemon 1
  Capers 1 Teaspoon
  Olive oil 1 Tablespoon
Directions

Cut fairly large pieces from the chicken, and leave on one side.
Prepare the sauce by blending lemon juice, tunny, anchovies and capers until smooth.
Gradually add olive oil, beating the while, until a thick sauce is made.
Coat the chicken pieces with this and arrange on a dish garnished with lemon slices and watercress.
