Celery Braised In Consomme
|Consomme||1 Cup (16 tbs)|
|Onion||1 Small, minced|
|Buttered toast slices||4|
|Paprika/Toasted almonds||1 Teaspoon (Adjust Quantity As Needed)|
1. Cut off part of the celery leaves. Cook the stalks, covered, in the consomme until tender. Remove the celery and keep warm. Reserve the broth.
2. Heat the butter in a saucepan, add the onion and saute, stirring, until transparent. Blend in the flour. Gradually add the broth and cook, stirring, until thickened.
3. Place the celery on the toast and cover with sauce. Sprinkle with paprika or toasted almonds.
