French Chicken Soup
|Leeks||6 , wash thoroughly, cut into round slices, do not use green part|
|Onions||4 , chopped|
|Carrots||10 , thinly sliced|
|Dry white wine||2 Tablespoon|
|Cold water||2 Cup (32 tbs) (Adjust Quantity As Needed To Cover And A Bit More)|
Put chicken in pot, add cold water to cover, bring to a boil.
Add leeks, onions, salt and pepper and a lot of thyme.
Set the lid half on.
Let boil for one hour.
Remove the chicken which will still be hard, and skin it.
Put chicken pieces back into pot.
Add carrots and cook until firm.
Continue boiling and add wine.
Simmer 15 minutes with lid fully on.
Put dressing in glass bowl first, then add watercress, cut up.
Put in refrigerator.
