French Fried Oysters
|Fat||2 Cup (32 tbs) (For Deep Frying)|
|Freshly ground black pepper||To Taste|
|Shucked oysters||1 Quart|
|Flour||1 Cup (16 tbs)|
|Cracker crumbs/Cornmeal||1⁄2 Cup (8 tbs)|
1. Heat the fat to 380° F.
2. Beat the eggs lightly and add the cream, salt and pepper.
3. Dredge the oysters individually in flour, dip in the egg mixture and roll in crumbs or cornmeal.
4. Fry the oysters until golden brown, about two minutes. Drain on absorbent paper and sprinkle with additional salt and pepper.
