Madeira Sauce For Beef And Veal
|Beef broth||1 1⁄2 Cup (24 tbs)|
|Madeira wine||1⁄2 Cup (8 tbs)|
1 In a pan, melt 2 tbsp butter.
2 Add in the shallots and sauté.
3 Add flour and cook, stirring for 1 minute.
4 Gradually, pour in the beef stock stirring with a wire whisk.
5 Allow the sauce to simmer for 10 minutes on the lowest heat.
6 Add Madeira and simmer for another 5 minutes.
7 Season with salt and pepper,/
8 Swirl in the remaining 1 tbsp. butter to make the sauce shine.
9 Serve with beef or veal roasts.
