Cheese And Potato Souffle
|Mashed potato||12 Ounce|
|Grated cheese||4 Ounce|
|Finely chopped chives/Grated onion||1 Teaspoon|
Mash the potatoes well.
Add the margarine, cheese, milk and chives, then season well.
Stir in the well beaten egg yolks and, when the mixture is cool fold in stiffly beaten egg white.
Put into a well greased souffle dish, bake in the centre of a moderately hot oven (400 °F.-Gas Mark 5) for 30 minutes until well risen and crisp and brown on top.
