French Pancakes Or Saucer Pancakes
|Caster sugar||2 Ounce|
|Self raising flour||2 Ounce|
|Caster sugar||2 Tablespoon (adjust quantity as needed)|
|Jam||2 Tablespoon (adjust quantity as needed)|
Heat the oven to 375°F, 190°C, gas no. 5 and well grease eight old saucers or line them with a circle of silicone paper and put to heat in the oven.
Cream the butter and sugar together until soft and beat in the eggs a little at a time and then blend in the flour.
Heat the milk until hot but not boiling and stir it into the creamed mixture.
Divide the batter between the saucers and bake for about 20 minutes until well risen and golden brown.
Place a blob of jam on the pancakes and fold them in half.
Sprinkle them with sugar and serve piping hot.
