|Cooked flaked fish||8 Ounce|
|Caper sauce||1⁄2 Pint|
Make a white sauce with butter, flour and milk.
Add pepper and salt, and a little finely grated onion if liked.
Then add the fish.
Remove from heat and stir in three well beaten egg yolks.
Now beat the whites until stiff and fold gradually into the mixture.
Put into greased souffle dish, and stand this in a bain marie, or baking tin containing water coming halfway up the sides of the dish.
Bake in a fairly hot oven for 15-20 minutes.
