|Peppers||2 (Green Or Red)|
|Chopped parsley||1 Tablespoon|
|Marjoram and basil||1 Pinch|
|Garlic||1 Clove (5 gm), finely chopped|
|Olive oil||5 Tablespoon|
Slice onion finely and cook in the oil.
Remove seeds and stalks from peppers.
Chop with baby marrows and aubergines and add to onion.
Season with salt and pepper.
Cover pan and cook slowly for about 30 minutes.
Add herbs and garlic.
Cook a further 10 minutes.
Drain off surplus oil.
