French Coconut Macaroons
|Vanilla extract||1 Teaspoon|
|Confectioners sugar||1 Cup (16 tbs)|
|Flaked coconut||2 Cup (32 tbs)|
|All purpose flour||1⁄2 Cup (8 tbs)|
Beat egg whites with electric mixer until stiff peaks form.
Add vanilla; mix well.
Add sugar gradually; beat well after each addition.
Beat until stiff and glossy.
Fold in coconut and flour; mix well.
Drop from teaspoon onto buttered and floured cookie sheet.
Bake in preheated 325 Â°F oven 25 minutes or until lightly browned.
