Classic Pommes Anna

Pommes Anna is a layered potato bake that is especially popular in France. Made with oodles of butter, the pommes anna is an indulgent dish. This recipe is made with added grated onions to flavor. Seasoned and cooked to doneness, this potato preparation can be served with fish or meats.
  Potatoes 2 Pound
  Melted butter 1⁄2 Cup (8 tbs)
  Grated onion 1⁄4 Cup (4 tbs)
  Salt To Taste
  White pepper To Taste

Peel potatoes; cut into paper-thin slices.
Brush bottom and sides of 6 1/2 x 3 inch souffle dish generously with butter.
Arrange potatoes, overlapping slices, around sides of souffle dish to form firm wall; cover bottom of dish with overlapping layer of potatoes.
Brush lightly with butter; sprinkle lightly with onion, salt, and pepper.
Repeat layers until all ingredients are used; cover lightly with foil.
Bake in preheated 400°F oven 30 minutes; remove foil.
Bake 30 minutes or until top is well browned; unmold on heated serving platter.
