Hot Harlequin Souffle
|Mixed dried fruit||250 Gram (Soaked In 3 Cup Water Overnight)|
|Lime juice||1 Tablespoon|
|Lime rind||1 Teaspoon, grated|
|Vanilla essence||1⁄2 Teaspoon|
Bring the fruit to the boil.
In the same water simmer for at least 30 minutes until mushy, stirring occasionally so that it does not burn at the bottom of the pan.
Mix in the sugar.
Remove stones if any and liquidize.
Mix in the lime juice, rind, vanilla essence and sherry.
Beat the egg whites until stiff and fold into the fruit mixture.
Bake for 20 minutes
