Add I or 2 tablespoonfuls of orange-flower water, and 3 drops of cochineal, gradually to 8 02.
of ground almonds.
Warm this mixture gently in a saucepan, with 5 oz.
of caster sugar, until it no longer sticks to the saucepan.
Leave it to cool, roll out, cut into fingers and bake in a very mild oven.
