|Butter/Margarine||4 Tablespoon, softened|
|Sifted powdered sugar||7 Cup (112 tbs)|
|Evaporated milk||3 Tablespoon|
|Egg white||1 , unbeaten|
|Green food coloring||12 Drop|
|Peppermint extract||1⁄2 Teaspoon|
Combine butter and 2 cups of the powdered sugar.
Stir in evaporated milk and egg white.
Mix in 3 to 4 cups powdered sugar.
Turn onto powdered sugared surface.
Knead in more powdered sugar till moderately stiff.
Divide in half and cover.
Make well in one half; add food coloring and peppermint.
Knead till color is even.
Divide green and white mixtures in fourths.
Pat each fourth to a 5-inch square.
(Cover remaining candy.) Place green square atop white; roll up jelly-roll fashion.
Seal side seam.
Carefully roll candy on lightly powdered-sugared surface to 1- to 1 1/2-inch-diameter roll.
Wrap in foil; chill.
Repeat, making 4 rolls in all.
Slice in 1/2-inch pieces; wrap.
