|Milk||1⁄4 Pint (2/3 Cup Or 150 Milliliter)|
|Sugar||1 Pound (2 1/4 Cup Or 450 Gram)|
|Double cream||15 Milliliter (1 Tablespoon)|
|Cocoa powder||1⁄2 Teaspoon (2.5 Milliliter)|
Stir the milk and sugar together in a large bowl until the sugar is dissolved. Cook for 6 - 8 minutes. The mixture should reach the soft ball stage. To test, drop a little of the mixture in cold water, it should form a soft ball when rolled between the fingers. Check for this stage after 5 minutes and then every minute until ready. Stir occasionally.
Stir in the cream and beat until the mixture is thick and creamy. Spoon half the mixture into small paper moulds until they are half full.
Beat the cocoa powder into the other half of the mixture and spoon it into the moulds.
