Almond Paste Or Marzipan

Ingredients
  Ground almonds 8 Ounce
  Egg yolks 2
  Lemon juice 2 Teaspoon
  Icing sugar/4 ounce icing sugar and caster sugar 8 Ounce
  Almond essence 3 Drop
  Rose water 4 Ounce (1/4 Ounce)
Directions

Mix the almonds and sugar together.
Add the beaten eggs and the flavouring and mix and knead very thoroughly.
To cover a cake, turn upside down and brush over with melted jelly or a thick sugar-and water syrup to make the paste stick.
Roll a piece of paste into a circle the size of the top of the cake and roll strips for the sides.
Leave overnight to set before covering with white icing.
