  Flounder fillet 1 Pound
  Egg 1
  Flour 1 Tablespoon
  Oil/Melted lard 1⁄2 Cup (8 tbs)
  Mushrooms 4 Ounce
  Scallions 4
  Bean sprouts 4 Ounce
  Cornstarch 1 Teaspoon
  Water/Stock 1 Tablespoon
  Sugar 1 Teaspoon
  Soy sauce 2 Tablespoon
  Sliced almonds 3 Ounce

Cut the fish into 2 inch strips dip in beaten egg, then in flour; do this twice.
Heat the oil or lard and fry the fish for 5 minutes.
Drain and keep hot.
Wash and slice the mushrooms; chop the spring onions (scallions) finely; wash and drain the bean sprouts.
Add all the vegetables to the remaining oil or lard and fry over fierce heat for 2-3 minutes, stirring all he time.
Mix the cornflour (cornstarch) to a smooth paste with the water or stock, add the sugar and soy sauce.
Stir into the vegetables and heat gently until slightly thickened.
Pile the vegetables and their sauce on a large dish arrange the fish on top and sprinkle with the almonds.
