Casserole Of Fillet Of Flounder
|Spinach||2 1⁄2 Pound|
|Flounder fillets||1 1⁄2 Pound|
|Chopped onion||2 Tablespoon|
|White pepper||To Taste|
|Butter||4 1⁄2 Tablespoon|
|Flour||3 1⁄2 Tablespoon|
|Milk||2 Cup (32 tbs)|
|Grated sharp cheese||1⁄4 Cup (4 tbs)|
Cook spinach in small amount of boiling, salted water until just tender.
Drain thoroughly; chop.
Spread in greased 1 1/2-quart casserole.
Place fillets on spinach; sprinkle onion over fillets.
Season with salt and pepper.
Melt butter; stir in flour.
Add milk slowly; cook, stirring constantly, until thickened.
Add salt and white pepper as desired; pour over onion.
Arrange shrimp over top; sprinkle with cheese.
Bake for 20 minutes in 400-degree oven.
