Flounder Au Gratin
|Flounder fillets||7 1⁄2 Pound|
|Lemon juice||3 Tablespoon|
|Egg yolks||2 , beaten|
|Medium white sauce||2 Cup (32 tbs)|
|Cheese||2 Tablespoon, grated|
|Dry white wine||1 Cup (16 tbs)|
Arrange fillets in shallow baking dish; sprinkle with salt, pepper and lemon juice.
Dot with 1 tablespoon butter.
Bake, covered, at 350 degrees for 20 minutes or until fish flakes.
Combine remaining butter and egg yolks with white sauce.
Pour sauce over fillets; sprinkle with cheese.
Broil for 2 minutes or until lightly browned.
