Turban Of Flounder
|Finely chopped onions||2 Tablespoon|
|Mushroom stems and pieces||4 Ounce (1 Can)|
|Herb seasoned stuffing mix||1 Cup (16 tbs)|
|Grated parmesan cheese||1⁄4 Cup (4 tbs)|
|Chopped pimento||2 Ounce|
|Celery salt||1⁄2 Teaspoon|
|Flounder fillet||1 Pound|
|Bechamel||1 Cup (16 tbs)|
1 Place butter, onion and mushrooms in 1 1/2-quart glass casserole.
2 Microwave about 3 to 4 minutes on 7 (MED. HIGH), or until onion is partly cooked. Stir in remaining ingredients, except fish and Bechamel Sauce; set aside. Lightly butter four 6 oz. custard cups. Coil one fillet around inside of each cup or cut fish to line inside of cup. Evenly divide stuffing among the 4 custard cups. Cover with wax paper.
3 Microwave 8 to 10 minutes on 7 (MED. HIGH), or until fish flakes easily (about 140°F.). Let stand, covered, 5 minutes before serving. Invert on serving platter. Serve with hot Bechamel Sauce. About 4 Servings
