|Green onions||3 , chopped|
|Garlic||1 Clove (5 gm), pressed|
|Celery rib||1 , chopped|
|Boiled shrimp||1⁄2 Pound, peeled deveined|
|Chopped mushrooms||1⁄2 Cup (8 tbs)|
|Milk||1 1⁄2 Cup (24 tbs)|
|Sauterne wine||1 1⁄2 Ounce (1 Jigger)|
|Grated nutmeg||1⁄4 Teaspoon|
|Flounder fillet||1 Pound|
|Grated italian cheese||1 Teaspoon|
Saute parsley, green onions, garlic and celery in butter.
Simmer until tender.
Add cooked shrimp and mushrooms.
Make a cream sauce by melting butter, slowly add flour and stir.
Add milk, stirring constantly.
Add wine, nutmeg, salt and pepper.
Broil flounder and keep warm.
Place flounder in ovenproof baking dish.
Combine shrimp and mushrooms with cream sauce mixture.
Cover flounder with shrimp sauce.
Sprinkle with Italian grated cheese.
Run under broiler to brown.
