Baked Fillets Of Flounder

Ingredients
  Fillets 6 , cut 2 inches wide by 6 inches long
  Butter/Margarine 1⁄4 Cup (4 tbs)
  Salt 1 Teaspoon
  Pepper 1⁄4 Teaspoon
  Mushroom caps/12 small canned button mushrooms 6 Large
Directions

1. Start oven, set at Moderate, 350° F. Rub 6 muffin pans with margarine.
2. Wipe the fillets with a clean, damp cloth. Dip them in melted butter or margarine, then sprinkle with salt and pepper.
3. Place each fillet in a greased muffin pan rolled around a mushroom cap or 2 small mushrooms. Pour some of the butter or margarine over the mushrooms.
4. Place in the oven and bake 20 minutes, basting both fish and mushrooms with more melted butter or margarine. Increase the heat to 400° F. for the last 5 minutes.
