Salmon Stuffed Flounder
|Canned salmon||6 1⁄2 Ounce, drained (1 Can)|
|White pepper||1⁄8 Teaspoon|
|Chopped fresh dill weed/1/2 teaspoon dried dill weed||1 Teaspoon|
|Flounder fillets/Sole fillets||1 1⁄2 Pound|
|Dry white wine/Chicken broth||3 Tablespoon|
|Lemon dill sauce||1⁄4 Cup (4 tbs)|
1. Place salmon, white pepper and egg in food processor workbowl fitted with steel blade or in blender container. Cover and process until smooth; stir in dill weed.
2. If fish fillets are large, cut into 6 serving pieces; pat dry. Place about 2 tablespoons salmon mixture on center of each piece fish. Roll up; place seam sides down in square dish, 8 x 8 x 2 inches. Drizzle with wine.
3. Cover tightly and microwave on high 8 to 10 minutes, rotating dish 1/2 turn after 5 minutes, until fish flakes easily with fork. Let stand covered.
4. Prepare Lemon-Dill Sauce, serve with fish.
