A Microwaved Crown Of Flounder

  Butter/Margarine 4 Tablespoon
  Bacon slices 6
  Water 1⁄2 Cup (8 tbs)
  Minced parsley 1 Tablespoon
  Minced onions 2 Tablespoon
  Herb-seasoned stuffing mix 4 Ounce
  Flounder fillets 6
  Mushroom caper sauce 1 Tablespoon

Microwave butter in a 2-cup glass measure at HIGH 1 minute.
Microwave bacon slices on roasting rack in a 12- x 8-inch glass baking dish at HIGH 6 minutes.
Remove and measure drippings.
Add enough melted butter to make 1/4 cup.
Crumble bacon.
Microwave water in a 1-cup glass measure at HIGH 2 minutes.
Add water, bacon drippings, crumbled bacon, parsley, and onion to herb stuffing.
Mix well.
Spread an equal amount of stuffing mix on each flounder fillet.
Roll fillet like a jelly roll.
Secure roll with wooden toothpicks.
Arrange rolls on end in a 9-inch round glass baking dish.
Pour remaining butter over roll-ups.
Cover with waxed paper.
Microwave at MEDIUM 9 minutes.
Rotate dish 1/4 turn at 2 minute intervals.
Let flounder stand, covered, 3 to 5 minutes before serving.
Serve with Mushroom Caper Sauce.
