Broiled Flounder A La Moutarde
|Skinless boneless flounder fillets||4|
|Ground black pepper||To Taste|
|Olive oil||1 Tablespoon|
|Dijon mustard||2 Tablespoon|
|Chopped chives||2 Tablespoon|
1. Preheat the broiler.
2. Arrange the fillets on a baking sheet or in a baking dish, and sprinkle them with pepper. Then pastry-brush them with the oil.
3. Using a pastry brush, spread the mustard evenly over the fish.
4. Put the fillets into the broiler, about 3 inches from the heat source. Broil for about 2 minutes, or until golden brown. Do not overcook. Place on individual dishes, sprinkled with chives and accompanied by a wedge of lime.
