This Flounder Florentine makes a delicious meal ! A complete dish with rice, spinach and flounder, you can serve it up with some savory sauces for your next meal ! Just try this Flounder Florentine and let me know if you like it !
Ingredients
  Onion 1⁄4 Cup (4 tbs), chopped
  Dill 1⁄8 Teaspoon
  Oil 2 Tablespoon
  Fresh spinach 1 1⁄2 Pound, chopped
  Cooked brown rice 1⁄2 Cup (8 tbs)
  Toasted almonds 1⁄4 Cup (4 tbs)
  Lemon juice 1 Tablespoon
  Flounder fillet 6
Directions

In a saucepan, saute onion and dill in oil until tender.
Add spinach and saute just enough to wilt the spinach (about 3 minutes).
Add rice, almonds and lemon juice.
Heat, stirring occasionally.
Place 1/4 cup of ten mixture on each fish fillet.
Roll and press ends securely.
Arrange in oiled, shallow baking dish (10 x 6 x 2 inches).
Bake in preheated oven for 20 minutes.
