New Bedford Flounder Casserole
|Flounder fillets||2 Pound (Fresh Or Frozen)|
|Seasoned stuffing mix||4 Cup (64 tbs) (Packaged)|
|Bacon slices||8 , diced|
|Dried tarragon||1⁄2 Teaspoon|
|Margarine||1⁄2 Cup (8 tbs)|
Preheat oven to 375°F.
Thaw frozen fillets.
Cook bacon until crisp; crumble and set aside.
Measure 1/4 cup of the bacon fat and return to skillet with margarine and stuffing mix.
Toss and add bacon, tarragon and enough hot water just to moisten add water gradually and not too much! Place a spoonful of stuff ing on each fillet; roll up firmly.
Line baking pan with foil; grease foil; place roll ups on foil in pan.
Brush with melted margarine.
Bake uncovered 20 minutes, until fish begins to flake when touched with a fork.
Should be very moist.
