Redfish is a common name applied to many varieties of fish. However it is most commonly meant to refer to the deep sea reef-dwelling snappers or slimeheads or alfonsinos. The ocean perch and the Norway redfish are the most common redfish found in the US. The redfish are often used in curries, prepared as Cajun courtbuillon and baked.
