Wash shad; remove head and tail.
Clean; split down back.
Remove backbone with as many other bones as possible.
Place, skin-side-down, on greased broiler.
Spread with melted fat; sprinkle with salt and pepper.
Broil 20 to 25 minutes, depending on size of fish.
Remove to hot platter; garnish with watercress and lemon slices.
