Yummy! That is all I can say when I think about how my family and I gobbled up the Rockfish Dijonnaise last night! Trust me, you will love the Rockfish Dijonnaise!
  Water 2 Cup (32 tbs)
  Dry white wine 1 Cup (16 tbs)
  Onion 1⁄2 , sliced
  Bay leaf 1
  Carrot 1⁄2 , sliced
  Thyme 1⁄4 Teaspoon
  Salt 2 Teaspoon
  Fish fillets 8
  White pepper 1⁄4 Teaspoon
  Dijonnaise sauce 1 Cup (16 tbs) (Adjust Quantity As Needed)

Preheat the oven to 350° F 10 minutes before the fish is ready to be baked.
Combine the water, onion, carrot, salt, white pepper, wine, bay leaf, and thyme in a roasting pan.
Bring to a boil, reduce the heat, and simmer, covered, for 15 minutes.
Add the fish fillets in 1 layer.
Simmer for 6 minutes or just until cooked.
Do not let the water boil.
Carefully remove the fillets to a baking sheet lined with a cloth towel.
Place the fillets on a heatproof platter.
Spread each one with Dijonnaise Sauce.
Bake at 350° F for 10 minutes.
Brown quickly under the broiler.
