Fish With Green Vegetables
|Fish fillets||1 Pound|
|Frozen peas||1 Cup (16 tbs) (1 Package)|
|Cucumber||1 Medium, cut lengthwise into fourths, then crosswise into 1 inch pieces|
|Stalk celery||1 Medium, cut diagonally into 1/4 inch slices|
|Onion||1 Small, cut into 1/4 inch slices|
|Lemon juice||1 Tablespoon|
If fillets are large, cut into 5 serving pieces.
Place in 2 quart microwavable casserole.
Sprinkle with 1 teaspoon salt and the pepper.
Cover and microwave on high until fish is almost done, 3 1/2 to 4 minutes.
Rinse frozen peas under running cold water to separate; drain.
Spoon peas, cucumber, celery and onion onto fish; sprinkle with 1/2 teaspoon salt and the lemon juice.
Dot with margarine.
Cover and microwave until vegetables are crisp tender and fish flakes easily with fork, about 6 minutes.
Sprinkle with paprika and garnish with lemon wedges, if desired.
