Fish With Crunchy Vegetables
|Fish fillets||1 Pound|
|Carrot||1 Medium, shredded|
|Stalk celery||1 Large, finely chopped|
|Green onions||3 , finely chopped|
|Lemon juice||1 Tablespoon|
If fish fillets are large, cut into 5 serving pieces.
Place fish in ungreased square microwavable dish, 8x8x2 inches.
Sprinkle with 1/2 teaspoon salt, the pepper and paprika.
Cover and microwave on high until fish is almost done, 3 1/2 to 4 minutes.
Spoon carrot, celery and onions onto fish; sprinkle with 1/2 teaspoon salt and the lemon juice.
Dot with margarine.
Cover and microwave until vegetables are crisp tender and fish flakes easily with fork, 2 to 3 minutes.
