Scalloped Roe

Ingredients
  Roe 1 1⁄2 Pound
  Parsley 1 Tablespoon, minced
  Lemon juice 1 Teaspoon
  Medium white sauce 1 Cup (16 tbs)
  Egg yolk 1
  Buttered crumbs 1⁄2 Cup (8 tbs)
  Salt To Taste
  Pepper To Taste
Directions

GETTING READY
1.Start by preheating the oven to 350F degrees
MAKING
2.Now parboil roe, drain it and break into pieces
3.In a greased baking dish, place half the roe
4.Sprinkle with parsley, salt, pepper and lemon juice
5.Now combine white sauce and egg yolk
6.Now pour half of this mixture over roe
7.Repeat it once again
8.Now cover with crumbs
9.Bake in moderate oven for 20 minutes or until browned
SERVING
10.Serve with salads
