Dog Fish Peasant Style

  Smoked streaky bacon 3 1⁄2 Ounce, diced
  Carrots 3 1⁄2 Ounce, diced
  Chopped onion 2
  White of leek 2 , finely sliced
  Skinned tomatoes 2 , coarsely chopped
  Garlic 2 Clove (10 gm), crushed
  Button mushrooms 3 Ounce, sliced
  Dry white wine 1⁄3 Cup (5.33 tbs)
  Dogfish 1 3⁄4 Pound
  Cognac 3 Tablespoon
  Saffron powder 1⁄4 Teaspoon
  Salt To Taste
  Pepper To Taste
  Butter 3 Tablespoon
  Chopped chives 1 Tablespoon

Put the bacon, carrots and onions in a casserole with 2 tablespoons of water.
Cover and microwave on HIGH for 4 minutes.
Add the leeks, tomatoes, garlic, mushrooms and white wine.
Cover and microwave on HIGH for 3 minutes.
Rinse the fish under plenty of cold running water.
Pat dry on kitchen paper and cut into 4 equal pieces.
Add the cognac and saffron, salt and pepper to the casserole.
Season the fish with salt and pepper.
Arrange the fish on top of the vegetable mixture.
Cover and microwave on HIGH for 3 minutes.
Turn fish over and cook for a further 3 minutes.
Remove the fish from the casserole with a slotted spatula.
Cut the butter into tiny pieces and stir into the vegetables.
Put the vegetables on a serving dish and arrange the fish on top.
Sprinkle with chopped chives
