Parry Sound Smelts Baked With Wine

Ingredients
  Smelts 10
  Chopped celery 1⁄2 Cup (8 tbs)
  Finely grated carrot 1⁄4 Cup (4 tbs)
  Dried parsley flakes 1 Teaspoon
  White wine 1⁄2 Cup (8 tbs)
  Fine bread crumbs 1⁄2 Cup (8 tbs)
  Salt To Taste
  Pepper 1⁄4 Teaspoon
  Butter 7 Tablespoon
Directions

Clean smelts and remove heads and tails.
Sprinkle celery, carrot, and parsley flakes in a greased baking dish.
Lay smelts on top.
Add wine, then bread crumbs, salt, and pepper.
Dot with butter.
Bake at 475°F about 12 minutes, basting several times with the liquid in the pan.
