Stuffed Fish Mornay

Ingredients
  Fish fillets 2 Pound
  Finely chopped onion 2 Tablespoon
  Finely chopped celery 2 Tablespoon
  Bacon fat 2 Tablespoon
  Fine white breadcrumbs 1 1⁄2 Cup (24 tbs)
  Mixed herbs 1⁄2 Teaspoon
  Hot water 1 Tablespoon
  Salt To Taste
  Pepper To Taste
  Butter 1 Tablespoon
  Flour 1 1⁄2 Tablespoon
  Milk 1 Cup (16 tbs)
  Grated cheese 4 Ounce
  Mustard 1 Pinch
Directions

Lay half of fish fillets in buttered baking dish.
Fry onion and celery in bacon fat.
Add breadcrumbs, herbs; salt, pepper and hot water.
Spread this stuffing over the fish in the pan and cover with the remainder of the fish.
Melt the butter, add the flour, then the milk and stir until smooth and boiling.
Add grated cheese, salt, pepper and mustard.
Pour over the fish and bake in covered dish at 350°F (180°C) for 45 minutes.
Extra sauce can be made and served separately.
