Gourmet Baked Fish

Ingredients
  Onion 1 Large, chopped
  Garlic 1 Clove (5 gm), minced
  Whole green onions 2 , chopped
  Celery ribs 2 , thinly sliced
  Parsley 2 Tablespoon, chopped
  Olive oil 1⁄4 Cup (4 tbs)
  Dry white wine 1⁄4 Cup (4 tbs)
  Canned crushed tomatoes 12 Ounce (1 Can)
  Fish 2 Pound (Fresh, Snapper/ Trigger/ Grouper / Any White Fish)
  Salt To Taste
  Pepper To Taste
Directions

Saute the onion, garlic, green onions, celery and pars ley in the olive oil in a skillet over medium-low heat for 10 minutes.
Remove from heat.
Stir in the winetomatoes, salt and pepper.
Place the fish in a 9x13 inch baking dish.
Spread the tomato mixture evenly over the fish.
Bake, covered, at 375 degrees for 30 minutes.
