Gourmet Baked Fish
|Onion||1 Large, chopped|
|Garlic||1 Clove (5 gm), minced|
|Whole green onions||2 , chopped|
|Celery ribs||2 , thinly sliced|
|Parsley||2 Tablespoon, chopped|
|Olive oil||1⁄4 Cup (4 tbs)|
|Dry white wine||1⁄4 Cup (4 tbs)|
|Canned crushed tomatoes||12 Ounce (1 Can)|
|Fish||2 Pound (Fresh, Snapper/ Trigger/ Grouper / Any White Fish)|
Saute the onion, garlic, green onions, celery and pars ley in the olive oil in a skillet over medium-low heat for 10 minutes.
Remove from heat.
Stir in the winetomatoes, salt and pepper.
Place the fish in a 9x13 inch baking dish.
Spread the tomato mixture evenly over the fish.
Bake, covered, at 375 degrees for 30 minutes.
